Our kitchen base sits in Block Q, in the middle of the lettered blocks that run A to U across Karachi's best-planned suburb. That means a family in Block H ordering dinner is not waiting on a rider crossing the city on Shahrah-e-Sher Shah Suri; the food leaves a kitchen in its own town and arrives while the raita is still cold and the pulao is still steaming.
The suburb's evenings run on familiar anchors: shopping at Hyderi Market in Block G, the Five Star Chowrangi crossing, Dolmen Mall Hyderi in Block C, commuters coming off the Green Line at Hyderi and Five Star stations. Dinner fits around all of it, which is why our regulars order the same way households here have always eaten: a family pack of beef yakhni pulao, or chicken biryani with aloo the Karachi way, plus zarda when the day calls for it.
